Our sirloin steaks are cut from Wagyu cattle that are born, raised, and finished on our family-run farm in the Scottish Borders. These cattle graze freely on grass and live stress-free lives, which translates into better meat quality, enhanced marbling, and a depth of flavour that’s impossible to replicate with intensive farming.
Sirloin has a naturally rich texture and a strip of fat along one edge that renders beautifully when cooked.
